Wines to Pair with 41 lbs of Tuna

 

Good friends are those who call you on a Friday night because they have too much fresh tuna! So while I contemplated what to do with 41 pounds of it (shared between only two people,) I came with a few recipe and pairing ideas that I’d like to share. 

 

Since tuna is very delicate, it calls for mineral wines that will not overwhelm its subtle flavor. On my first trip to the cellar, I returned with a 2013 Sauvignon Blanc from Piedmont -- just perfect for the first recipe. The Comm. G.B. Burlotto Viridis Langhe Bianco is crafted by wise hands on a small Piedmont estate established in 1850.

You may ask why a Sauvignon Blanc has been aged for five years? By doing so, it evolved into a less angular and incredibly long-finished Sauvignon. It matures with notes of nectarines and flowers and turns into a denser wine that can shoulder the strength of some spices. This nectarine taste pairs very well with the touch of soy sauce added to the tuna tartare.

 

I combined the tuna with a mix of finely chopped red onions, chopped chives, salt, olive oil, fresh lemon, sriracha sauce and chili pepper flakes. I place the chopped avocado at the bottom of a small container followed by the tuna and then flipped it onto the dish. To please the Sauvignon Blanc, I topped the tuna tartare with a splash of soy ponzu sauces and a touch of mayonnaise.

The following day, I made a spicy sashimi salad with fresh julienne carrots, cherry tomatoes, tuna, spices and sesame seeds. I added a sweet and spicy sauce which offered gorgeous balance to the recipe. The masterpiece was complete by pairing the dish with Val de Mer Ultra Brut by Patrick Piuzefrom Chablis. For me, it’s a super star! Using the Méthode Champenoise, quality is not sacrificed with this inexpensive sparkling wine and with a long finish, its strength was the perfect palate cleanser for the sweet sauce. 

 

This perfect pairing impressed me and with 18 pounds of tuna left, I still have more “perfect pairings” to work on!
